Quella che comunemente chiamiamo Nori, è un alga rossa appartenente al genere Porphyra (Bangiophyceae). In particolare, l’alga Nori fa riferimento ad alcune specie ben precise, tra cui spiccano per notorietà Porphyra yezoensis e Porphyra tenera. L’alga Nori è tra le macroalghe più nutrienti, con un contenuto proteico del 25-40%. Ricca di iodio (100-300 µg per grammo) e povera di grassi e carboidrati. L’alga Nori è nota per la ricchezza in minerali e Vitamine A (sottoforma di Beta-Carotene), C (presente in quantità maggiori che in un’arancia), PP (niacina) ed Acido Folico. L’amminoacido più importante in termini quantitativi è l’Arginina. Tra le vitamine caratteristiche dell’alga Nori, un ruolo di primo piano è ricoperto dalla vitamina B12, spesso carente nella dieta del vegetariano/vegano. Nell’alga Nori sono presenti anche l’amminoacido Taurina che contribuisce, insieme alle fibre solubili, a ridurre i livelli di colesterolo nel sangue, oltre a regolarizzare l’attività epatica, ed il pigmento rosso fluorescente r-ficoeritrina, utilizzato come marker nella diagnostica medica. Il contenuto di betaina contribuisce a ridurre il rischio cardiovascolare associato ad alti livelli plasmatici di omocisteina, tipici di chi segue una dieta ricca di carne e povera di ortaggi e frutta di stagione. Numerosi sono i benefici salutistici ascrivibili al regolare consumo di alga Nori, legati all’abbondante presenza di nutrienti amici per la salute (tra cui iodio, selenio, beta carotene, vitamine antiossidanti, betaina, alginati, ferro ed acidi grassi omega tre, in particolare EPA). Il consumo di alga Nori può essere utile ai soggetti che soffrono di ipercolesterolemia, ipertrigliceridemia, pre-diabete, trombosi, peptica, ulcera, malnutrizione, stress e difficoltà di concentrazione, stitichezza, ipotiroidismo da carenza iodica, malattie infiammatorie, sovrappeso ed obesità, oltre a giocare un possibile ruolo preventivo nello sviluppo di cardiopatie ed alcuni tipi di cancro, come quello al colon e alla mammella.
