La ricciola appartiene alla famiglia dei Carangidae, Genere Seriola e Specie S. dumerili; è un pesce pelagico (ovvero migratore) ed essendo un grande predatore, il suo regime alimentare è costituito principalmente da pesci e molluschi. È una specie che non può essere allevata e che colonizza tutti i mari temperati o poco freddi, ovvero gli oceani: Atlantico, Pacifico e Indiano, ma non manca nel mar Mediterraneo. La ricciola è gregaria e si muove principalmente in branco, anche se all’aumentare della mole (quindi con la vecchiaia) può acquisire abitudini solitarie. La ricciola è un “pesce azzurro” dalle carni estremamente pregiate, sia per le caratteristiche organolettiche e gustative, sia per il notevole contenuto nutrizionale (apporta Proteine ad alto valore biologico e acidi grassi essenziali del gruppo Omega‰3). La ricciola è un pesce magro con una buona porzione di Acidi Grassi Polinsaturi. Queste caratteristiche le conferiscono proprietà nutrizionali eccelse: leggerezza e apporto calorico moderato, buona fonte di Acidi Grassi Essenziali, ottima quantità di Proteine ad alto valore biologico ed ottime quantità di Potassio, Fosforo, Tiamina, Niacina, Cobalamina e Retinolo equivalenti.
